Either a tasty snack, or cut up and wrap in foil to use as an energy bar during exercise.
Put all the ingredients in a food processor and blend until smooth. Spread evenly into a tray and bake at 150 degrees centigrade for about 15 minutes. Allow to cool, then cut into individual bars. Store in an air-tight container.
Cut into small squares.
Tip: I use a silicone tray as it makes it easier to remove the baked mixture.
These are great for a healthy snack, pre-training fuel or for wrapping up and taking with you on a long ride.
I sometimes add one beetroot to the mix when I'm going to be eating the cakes before and/or during races. This gives you the endurance benefits of beetroot with no noticable change in flavour, although it does make the cakes red!
